Pressure Cooker Turkey Chili

INGREDIENTS
1½ cups dried white beans
1½ tablespoons olive oil
¾ cup green pepper, diced
¾ cup red pepper, diced
1 poblano pepper, minced
3 cups yellow onion, diced
1½ pounds 93% lean ground turkey
1 tablespoon black pepper
2 teaspoons cumin
2 tablespoons chili powder
3½ cups low-sodium chicken broth
2 6-ounce cans no-salt tomato paste

 

DIRECTIONS
Soak white beans in water
overnight. Set pressure cooker
to “Sauté.” Add oil, peppers and
onions. Sauté until onions are
clear. Add turkey and spices, and
then cook until turkey is almost
done. Add chicken broth, tomato
paste and beans. Close lid and press
“Bean/Chili” or “Soup/Broth.” Cook
for 30 minutes, and then release
steam and open. Stir and serve.
